The ingestion of high amounts of Biogenic amines can cause severe poisoning for humans and animals. Biogenic amines are produced in foods and feeds in a decarboxylation process of the corresponding free amino acid. This decarboxylation reaction is catalyzed by bacterial Amino acid decarboxylases.
Histamine has been implicated as the causative agent in several outbreaks of food poisoning. Biogenic amines, such as tyramine, putrescine, and cadaverine normally increase during the processing and storage of food and feed products, whereas spermidine and spermine decrease or remain constant. Their amounts and ratios indicate the hygienic conditions and are a quality marker for food and feed products, called the Biogenic Amine Index (BAI).
