Cooking oil analysis

Business intending to market cooking oil products must conduct testing to establish a basis for evaluation and the issuance of quality standard declarations; this process supports regulatory management and ensures consumer safety.

Why is it necessary to test cooking oil?

Cooking oil is a general term for substances refined from plant or animal sources that remain liquid at room temperature. These oils can be produced from a wide variety of raw materials, such as olive, palm, soybean, canola, pumpkin seed, corn, sunflower, safflower, peanut, grape seed, sesame, argan, and rice bran oils, as well as animal-derived fats like lard and butter.

When businesses intend to market cooking oil products, they must conduct product testing to establish a basis for evaluation and the issuance of quality standard declarations; this process supports regulatory management and ensures consumer safety. Consequently, cooking oil testing serves not only as a quality assessment criterion but also as a mandatory requirement for businesses to complete the procedures for declaring quality standards.

Current regulations on the testing of cooking oil on the market

Reference Frameworks and Applicable Regulations

Currently, the testing parameters for cooking oil in Vietnam are based on the following regulations:

  • QCVN 29:2026/BCT for refined vegetable oil, effective from December 1st, 2026
  • Corresponding TCVN standards, customer specifications, retailer requirements, food safety regulations, nutrition labeling requirements, and internal company standards.

Cooking oil testing parameters

  • Sensory parameters
  • Physicochemical parameters
  • Heavy metal parameters
  • Microbiological parameters
  • Pesticide residue parameters

Based on the aforementioned testing parameters for cooking oil, and depending on the specific testing objective, such as quality assessment, periodic testing, or testing for product quality declaration procedures, enterprises may add or remove parameters to save time and optimize costs, while still ensuring compliance with the product regulations established by the Ministry of Health of Vietnam.

Sensory evaluation

Assessment of color, appearance, odor, taste, clarity, and other sensory characteristics to verify product quality and identify potential signs of oxidation, quality deterioration, or sensory defects.

Physicochemical analysis

Determination of acid value, peroxide value, iodine value, saponification value, anisidine value, oxidative stability, moisture content, impurities, fatty acid composition, and other key physicochemical parameters to evaluate product quality, stability, and shelf life.

Toxin and contaminant analysis

Testing for aflatoxins (where applicable), PAHs, 3-MCPD, glycidyl esters, mineral oil hydrocarbons (MOSH/MOAH), process contaminants, and other hazards that may impact food safety or regulatory compliance.

Heavy metal testing

Determination of lead (Pb), cadmium (Cd), mercury (Hg), arsenic (As), and other metallic contaminants in accordance with food safety regulations, product specifications, and customer requirements.

Microbiological testing

Assessment of microbiological parameters where applicable, environmental contamination risks, hygiene indicators, and process control measures to support food safety management systems.

Pesticide residue analysis

Testing for pesticide residues, herbicides, fungicides, and other agricultural chemicals that may be present in vegetable oils as a result of agricultural production practices or raw material sourcing.

Product authenticity and fraud detection

Verification of vegetable oil authenticity, botanical origin, fatty acid profile, compositional claims, geographical indications (where applicable), and detection of adulteration, substitution, or other forms of food fraud.

Nutritional and labeling verification

Verification of nutritional values, fatty acid composition, nutrition and health claims (where applicable), product specifications, and compliance with applicable labeling requirements.
