STEC is naturally present in the intestinal microbiota of humans and animals. However, certain strains carry the stx gene, which is responsible for producing Shiga toxin and potentially causing severe illness. Strains capable of causing clinical disease are often referred to as EHEC (Enterohemorrhagic E. coli). They can damage the kidneys, colon, nervous system, and brain, making them a major food safety concern.
The main sources of STEC transmission include raw or undercooked products such as:
Contamination often occurs during slaughter, milking, irrigation, runoff from ruminant farms, or during food handling and processing. Drinking water can also be contaminated accidentally or due to insufficient treatment. Cattle and sheep are common asymptomatic carriers.
