Understanding E. coli (STEC)
STEC is naturally present in the intestinal microbiota of humans and animals. However, certain strains carry the stx gene, which is responsible for encoding Shiga toxins and potentially causing severe illness. These strains are often referred to as Enterohemorrhagic E. coli (EHEC), and can damage the kidneys, colon, nervous system, and brain, making them a major food safety concern.
Transmission and routes of contamination
The main sources of STEC transmission include raw or undercooked products such as:
- Undercooked minced meat
- Raw milk and unpasteurised dairy products
- Raw vegetables and sprouted seeds
- Unpasteurised juices (e.g. apple juice)
- Contaminated water or flour
Contamination often occurs during slaughter, milking, irrigation, food handling and processing, or as a result of runoff from ruminant farms. Contamination can also occur accidentally or due to insufficient treatment of drinking water.
