STEC is naturally present in the intestinal microbiota of humans and animals. However, certain strains carry the stx gene, which is responsible for encoding Shiga toxins and potentially causing severe illness. These strains are often referred to as Enterohemorrhagic E. coli (EHEC), and can damage the kidneys, colon, nervous system, and brain, making them a major food safety concern.
The main sources of STEC transmission include raw or undercooked products such as:
Contamination often occurs during slaughter, milking, irrigation, food handling and processing, or as a result of runoff from ruminant farms. Contamination can also occur accidentally or due to insufficient treatment of drinking water.
In the UK, the detection of any STEC (Shiga Toxin-producing E. coli) in ready-to-eat (RTE) foods is considered a serious public health risk, which might necessitate action such as immediate product withdrawal or recall. For foods intended for further processing, a risk assessment determines the appropriate response.
