Food Microbiology and Hygiene Training

Microbiological analyses form the basis of many food safety decisions. But how do you interpret a laboratory result? Why does a microorganism consistently exceed the limit in one product, but not in another? And which control measures are actually effective? In practice, finding the answers to these questions is often more challenging than expected.

Five days of in-depth learning about microorganisms

During this unique five-day Food Microbiology and Hygiene Training, you will explore the world of microorganisms and learn how to apply microbiological knowledge directly in practice. You will gain insight into the characteristics of microorganisms, the causes of contamination and the factors that influence microbial growth. You will also discover how to control microbiological risks within production processes and food safety systems.

Experienced microbiologists and specialists from Eurofins, who work on microbiological issues in the food industry on a daily basis, will share their expertise with you. Who is this training for?

This training is intended for professionals who are responsible for or involved in the quality and safety of food products, such as:

  • quality managers and quality officers;
  • QA, QC and R&D professionals;
  • production and operations professionals;
  • consultants and advisors;
  • inspectors and regulatory authorities;
  • professionals in catering, foodservice and large-scale kitchens.

The training is suitable for participants with a higher professional education (HBO) level of thinking and working. Previous experience with microbiology is not required, although some basic knowledge of the food industry is an advantage.

Programme

The training consists of a five-week programme with five training days, in which theory and practice are continuously combined. The programme concludes with an exam.

Day 1 | Basic principles of food microbiology

You will be introduced to the world of microorganisms, learn to recognise the main groups and explore foodborne pathogens and their characteristics.

Day 2 | Growth and development of microorganisms

You will learn which intrinsic and extrinsic factors influence the growth of microorganisms and how this knowledge is applied to shelf life and food safety.

Day 3 | Controlling microbiological risks

This day focuses on practical control measures, including HACCP, hygienic design, cleaning and disinfection, biofilms and the role of microbiology within R&D and production.

Day 4 | Fermentation, prebiotics and probiotics

You will explore the role of microorganisms in fermentation processes and gain insight into the applications of prebiotics and probiotics.

Day 5 | Legislation, sampling and practice

During the final training day, you will cover legislation and regulations, sampling and the interpretation of laboratory results. You will also work through practical case studies in preparation for the exam.

Practical learning

This training stands out because of its strong connection between theory and practice. In addition to classroom sessions, you will work on practical assignments and take part in interactive learning activities. You will also have access to e-learning courses to further deepen your knowledge.

A special part of the training is a visit to the Eurofins microbiology laboratory in Heerenveen. Here, you will see how analysts perform microbiological analyses in practice and how laboratory research contributes to food safety. Between the training days, you will work independently on the course material and prepare for the final exam.

This professional training programme is the further development of the leading and well-established Food Microbiology and Hygiene Training that was provided by FiMM for many years.
