Cereulide is a toxin produced by certain strains of Bacillus cereus. The unique (and risky) characteristic of this toxin is that it is heat-stable and is not always detected by standard microbiological analyses. After all, cereulide is a toxin, not a bacterium.
Therefore, it is important to analyse not only for Bacillus cereus, but also for the cereulide toxin. This is particularly important for infant formula and baby food, as demonstrated by recent recalls.
