Mycotoxins
Mycotoxins is a toxic secondary metabolite produced by fungi. Poisonous fungi or mold are often found in food and feed plantations. Fungi that produce the toxin are Aspergillus, Penicillium and Fusarium. Beans, corn, wheat, barley, coffee, pepper, rice, and other kinds of plantations of the sort hold the biggest risk towards mycotoxins. The negative impact of mycotoxins for human health is that it is able to create carcinogen, cytotoxic, estrogen, immune suppressant, nephrotoxic, neurotoxin and teratogen.

Polycyclic Aromatic Hydrocarbon (PAH)
- Polyaromatic hydrocarbon (PAH) is an organic compound, which contains carbon and hydrogen with at least two fused aromatic rings, each ring contains five or six carbon atoms. PAH has nonpolar characteristics, and is produced as a byproduct of burning fuel that is imperfect (both fossil or biomass). PAH impacts human health in a negative way in terms of it being carcinogenic, mutagenic and teratogenic.

- Dioxins are an environmental pollutant that is part of a group of dangerous chemicals known as persistent organic pollutants (POPs).
- A group of persistent organic pollutants (POP) is made up of: Dioxin (75 congeners with 7 indicator toxic), Furan (135 toxic congener with 10 indicator) and PCB (congeners 209 with 12 indicators of dl-dioxin). All three are highly toxic, but when compared between the three levels of toxicity, it would be: dibenzo-p-dioxin > dibenzofuran > dl-PCB dioxin.

Proximate Test
The proximate analysis is a method of chemical analysis to identify the contents of nutrients such as: protein, carbohydrates, fat and fibers in a food substance. It has the advantage of being able to assess food or feed based on its quality. The proximate analysis test covers testing the contents of: water, ash, fat, protein, fiber, as well as testing the contents of carbohydrates.

- Preservatives is a type of substance added to products like food, medicine, paint, biological samples, wood, etc to prevent decomposition by the growth of microbes or undesirable chemical change. There are many rules and regulations regarding the use of preservatives and one of them is Permenkes No. 033 tahun 2012.
